Now I know many of you may never in your life eat a finger sandwich in your life and that is ok. This is for those events that call for them or just for those that enjoy cukes or party fare. 2 3oz. Packages Cream Cheese 2 Cucumbers 1 Onion 1/8 Teaspoon Hot Pepper Sauce Mayonnaise and Salt
Directions:
1. Mash the Cream Cheese with a fork. 2. Wash the cukes and peel the Onion, then Grate them- No need to peel the Cucumber 3. After you have grated it all together, press the juice out. I usually just take a handful out and squeeze it. 2. Combine the Cucumber and Onion with the Creme Cheese. 3. Add the Hot Pepper Sauce and salt to taste. 4. Add Mayonnaise till you have a spreading consistency.
To make finger sandwiches, take loaf of bread- white or wheat and spread all of the pieces LIGHTLY with softened Butter or Margarine. (This keeps the bread from soaking up the spread) Spread the buttered side of the bread with you filling- in this case Cucumber Spread- no need to overfill to the edges, this is supposed to be light. Now cut the edges off and cut in 4ths, usually done crosswise so you end up with 4 little triangles.
