I have also heard these called Snow on the Mountain, whatever you want to call them they are fudgey goodness. You really do need to make the dough the night before or plan on popping it in the freezer for a couple of hours to be able to use it the same day. This one is also nice because you don't even need to get your mixer out, you do this by hand and all in one pan. How cool is that???
If you don't have the Unsweetened Chocolate, you can substitute 3Tablespoons of Cocoa and 1 Tablespoon of Vegetable Oil for each ounce or square of Unsweetened Chocolate.
4 Squares Unsweetened Chocolate (12 TableSpoons Cocoa and 4 Tablespoons Vegetable Oil if you need to substitute) 1/2 Cup Oil (use this whether you are subbing or not) 2 Cups Sugar 4 Eggs 2 Teaspoons Vanilla 2 Cups Flour 2 Teaspoons Baking Powder 1/2 Teaspoon Salt 1 Cup Powdered Sugar 1/2 Cup Chopped Nuts (Optional as always)
Directions: Preheat oven to 350 degrees 1. Melt the Unsweetened Chocolate over low heat in a saucepan on stove 2. Add the Vegetable Oil and Sugar, beat in well 3. Mix in Eggs and Vanilla 4. Add the Flour, Baking Powder, and Salt, Mix Well 5. Chill dough overnight or pop in the freezer for a couple of hours 6. Form into balls the size of a Walnut, or a large marble 7. Put your Powdered Sugar in bowl 8. Roll your Chocolate Balls in the Powdered Sugar and place on a cookie sheet 9. Bake for about 10 minutes or till done. Don't overbake these little sweeties, they work well to bake and then freeze.
