There is nothing like a nice warm piece of Corn Bread to remind you of home. This recipe is sure to be favorite for Corn Bread 1 Cup All Purpose Flour 1 Yellow Corn Meal ( Stone Ground if you have it) 1/4 Cup Sugar 1 Tablespoon Baking Powder ( Tablespoon is right) 1/2 Teaspoon Salt 2 Eggs 1 Cup Whipping Cream 1/4 Cup Vegtable Oil 1/4 Cup Honey 1 Tablespoon Butter or Margarine Directions: 1. Preheat oven to 400 degrees. 2. While the oven is preheating put a cast iron skillet with 1 Tablespoon of butter in it in the oven to preheat as well. 2. Combine Flour, Cornmeal, Sugar, Baking Powder and Salt in a medium bowl. 3. In a small bowl beat the eggs, then add the Cream, Oil and Honey- Beat well. 4. Stir this wet mix into your dry ingredients just till moist. You do not want to overmix. 5. Get the potholder and take your hot cast iron pan out of oven, swirl the butter around and then carefully pour your cornbread mixture in. 6. Bake for 20 - 25 minutes or till golden brown. Eat hot with butter and more honey. Comments (0)
