Another recipe of my mom's. She grew up in a family of 8 children and I tell you what, in her day she could cook and sew Anything. This is a simple yet fancy Rice dish that is perfect for any occasion, but Mom always makes it for Holiday's hence its name. 1/3 Cup Butter or Margarine 1/2 Cup chopped Green Pepper 1/4 Cup chopped Onion 1 Cup uncooked White Rice- NOT THE INSTANT VARIETY 2 Chicken Bouillon Cubes 1 Teaspoon Salt 1/8 Teaspoon Pepper- Ok you have me here I just shake some in. Who has 1/8 t. measure 1 Large can Green Peas - Drain and save the liquid. 1 Large can Sliced Mushrooms- Drain and Save the liquid
Directions 1. Preheat oven to 350 degrees. 2. In a pan on the stove saute the Onion, Green Pepper and Rice in the Butter. 3. Take the reserved Pea Juice and the Mushroom Juice in a large measuring cup and add enough water to it to measure 2 1/2 cups of liquid, Pour this into a stockpot. 4. Dissolve the Bouillion Cubes in this liquid and heat it to boiling. 5. Combine all ingredients together in a Pyrex or Glass baking dish and bake for 40 minutes at 350 degrees.
Serve hot
