This is almost better than sex when it is straight out of oven and slathered with butter.

I include this for those that are looking for a small challenge, it does take a little time but soooo worth it.

5-6 Cups sifted Bread Flour

3 T. Sugar

2 t. Salt

2 packages Active Dry Yeast

2 Cups Water

¼ Cup Vegetable Oil

* Do NOT use Quick Rise Yeast

Grease 2 8 x 4 or 9 x 5 Loaf Pans

Lightly spoon Flour into measuring cup and level off. In large bowl combine 2 Cups Flour, Sugar, Salt and Yeast. Blend Well.

In small saucepan, heat water and oil till very warm, 120-130°. Add warm liquid to Flour mix. Blend at low speed till moistened, beat 3 minutes at medium speed.

By hand stir in 2½ to 3 cups Flour until dough pulls cleanly away from side of bow.

On floured suface, kneed in ½ to 1 Cup of Flour till dough is smooth and elastic with blisters under surface, about 10 minutes.

Place dough in greased bowl, cover looseley with plastic wrap and a cloth towel.

Let rise in warm place till doubled in size, about 1½ hours. Punch down several times to remove all air bubbles, divide dough into 2 parts and form into balls and allow to rest on counter covered with inverted bowl for 15 minutes.

Work dough with hands to remove bubbles. Shape into 2 loaves and place in pans, cover and let rise in warm place till dough fills pan and tops of dough are about 1" above pan edges- this takes about 1 hour.

Heat oven to 375°

Bake 45-55 minutes till loaves sound hollow when tapped. Remove from pands and cool on rack.
