Lasagna Thick Rich Meaty Sauce layered over Noodles and Cheese, does it get any better than that?? Since I had to go Gluten Free (means no Wheat) it took awhile for me to find substitute noodles that were acceptable. I Finally did and I highly recommend DeBoles Gluten Free Lasagna Noodles. You don't even cook them first which is great. My Lasagna recipe is very good and very easy plus it makes a lot and is easy to double. When I cook Lasagna for the family it is easy for me to cook a pan for me along at the same time.
You will notice I also use NO COOK Lasagna Noodles for the family batch. You can also make it the night before with regular noodles and they will soften overnight. Here is a picture of some of the products I use. You will also notice the jar of minced Garlic, ok, so I don't always have fresh garlic on hand- shoot me, I find it much easier and cheaper in the long run to use this for most cooking. Now I know Cottage Cheese seems a bit odd maybe, if you want fancier but drier then you can use Ricotta Cheese.
This has been a family favorite for quite a while. 1 Large Onion 3 Lbs. Hamburger Meat 2 Container Small Curd Cottage Cheese 3-4 Cups Cups Shredded Mozzarella Cheese 1½ Cup Grated Parmesan Cheese 2 Cloves Minced Garlic or 1 teaspoon minced from a jar 2 Jars Prego Spagheti Sauce 1 Box Lasagna Noodles Salt and Pepper In large stockpot, put in Onion and a little water and cook Onion briefly then add Ground Beef and cook till done. While this is cooking Bring water to boil and cook the Lasagna Noodles, unless you are using the No Cook variety. When done Drain with cold water and set aside. When meat is done, drain well and return to stockpot. Salt and Pepper to taste. Keep on low heat and stir in Garlic, 1 Cup Parmesan Cheese and the Spaghetti Sauce. Remove from heat and stir in Cottage Cheese. In 2 9 x 13 pans place a little sauce then start layering with Noodles, Sauce and Mozzarella ending with sauce on top. Sprinkle ½ cup Parmesan on top. Bake pans at 350° for about 1 hour or till done. It is best to let set for 15 minutes then serve. Yields: 15-20 servings This recipe can halfed or doubled very easily, depending on how many you are serving. You can also put it together the night before and you do not even need to cook the noodles, put them in dry. Note: Gluten Free Noodles are always used uncooked even if preparing same day- just follow the instructions on the box. Comments (0)
