My Daughter is allergic to many things (even more than me) so finding things she can eat is a challenge. For Easter she is having to make her own meal because I don't think there is hardly anything on menu she can eat. She is fine with that since Grandma is cooking. I wanted her to have a dessert tho so I came up with a cookie recipe that is quick, easy and good for you. She does not use sugar, we use Agave Syrup. She cannot have milk so we use Unsweetened Soy Milk.

I am giving you the recipe the way I made it for her, these are very good tho. My husband loves good food and could not gain a pound if he had too loves these, he has already had three of them. His only suggestion would be I might try adding Raisins to them next time. I would have this time but we did not have any. Ingredients: 1 Cup Gluten Free Flour (see My Flour Mix recipe in the index 3/4 Cup Old Fashioned Oats 1/2 Teaspoon Baking Powder 1/2 Teaspoon Baking Soda 1/2 Teaspoon Salt 1/3 Cup Agave Syrup (if using Sugar or Raw Sugar use 1/2 cup) 1/4 Cup Canola Oil (If you are not using Agave use 1/3 Cup Canola Oil) 1/3 Cup Soy Milk (Regular Milk would work fine if you can have it) 1 Egg 1 Teaspoon Vanilla 1/2 Ripe Banana cut into small pieces 1/3 Cup Chopped Nuts (Walnuts or Pecans) This is also Optional
Directions: Preheat oven to 350 degrees 1. In mixing bowl combine the Flour, Oats, Baking Powder, Baking Soda and Salt together. 2. In a seperate bowl mix the Egg, Agave Syrup, Canola Oil, Milk and Vanilla together. 3. Pour the wet ingredients into the dry ingredients and stir till well blended. 4. Stir in the Banana pieces and Nuts if using and also the Raisins if you decide to add those. 5. Slap a Silpat on your cookie sheet or line it with parchment paper so they won't stick 6. Cook for 20- 25 minutes - you read that right these babies take a while to cook make them golden brown. I do recommend that anytime you are baking always rotate the cookie sheet or pan about 1/2 way thru the cook time. You can use this basic recipe for a jump of of all kinds of cookies. 1. Add Raisins 2. Add Chocolate Chips 3. Cinnamon 4. Substitute Applesauce for part or all of the Canola Oil- I will try that next.
