I live with a real old fashioned Meat and Potatoes man. That means fried foods. Coated fried foods.

Now keep in mind I cannot use regular flour so I had to get a little inventive in my coating mix. The following is my basic mix. I will tell you about the add-ons at the end.  I have played around with different flours in this and the best one I have found is just plain old Brown Rice Flour. Now I know that is more expensive than the White Rice Flour, you can use either. 

I keep this mix in the fridge and pull it out when I need to fry some Chicken or maybe some Chicken Fried Steak. I also use this mix to drege Chicken in before I bake it for Chicken Tenders and the like. 

For the Corn Flakes look closely at your ingredient list, I know you always do ;)... I say that because I  sometimes get complacient about that and slip up then when I get home I am upset with myself for not looking. 

 

1 Cup Brown Rice or White Rice Flour

1/2 Cup Crushed Corn Flakes

1/2 Teaspoon Pepper

1/2 Teaspoon Salt 

 

Now that is just a basic, I never measure any of this, I just mix it up till it looks right. If I am cooking Chicken, I will add Paprika it helps give a nice color- not much flavor so dont worry about that part of it. The color of food is sometimes almost as important as anything else, think of it as curb appeal for food. 

You can also add Rosemary and Thyme or any other spices and seasonings you like.
