| Quick & Easy Tomato Hamburger Stew |

This is a recipe my daughter came up with. It is can be very spicy- she likes spicy and when a lot of other things are taken away you need to compensate for flavor. This will make a good size batch for one person to freeze and eat on or for a family. My DD is allergic to over 27 items so we took those all out of her diet for a solid 4 months and we are now trying to add back a few items to see if they bother her. Some she will never be able to eat again and she is ok with that. The Wheat/Gluten is pretty easy to get around, the Yeast she will never be able to have again but thank goodness for Chebe Brand Bread mic- No Yeast or Gluten. After she changed her eating style she is not only feeling much better and has way more energy but she has lost 30 pounds. This has been strictly thru diet and no longer eating 3 meals a day but more like 5 or 6 small ones and drinking LOTS of water. Her motto is Eat to Live not Live to Eat.
1.5 to 2lbs of hamburger (cooked and drained) 1 can of Red beans 1 can of Great Northern White beans 2 4oz. cans of Diced green chilies or Jalapenos (optional) 1 can of Tomato paste (can use less if you wish) ! can Fire Roasted Tomatoes with Garlic Chili powder to taste (I usually add several tablespoons) Cayenne Pepper to taste (I usually add about a tablespoon) Topatillo Hot Sauce to taste (Several shakes of the bottle will do) After cooking and draining the hamburger combine all other ingredients and simmer until heated through.
Mom's Note- I tasted this and I would use less than 1/2 can tomato paste but that just like the spicy is a personal taste. I did promise to print her recipe just the way it is.
