This is the recipe I have come up with and use cup for cup in all my baking.  I buy the Tapioca starch, Potato Starch and Rice Flour at a local Asian Market.  For the Potato Flour I whiz some Instant Potato Flakes in my little coffee grinder.

 

2 Cups Sorguhm Flour

3 Cups White Rice Flour

3 Cups Brown Rice Flour

2 Cups Tapioca Starch

2 Cups Potato Starch

1/2 Cup Ground Flax Seed (Optional )

1/2 Cup Potato Flour

1/4 Cup Xantham Gum

 

Mix all together in a very large bowl. I keep mine in a large Cereal Container in the Fridge.
