A yearly favorite- I have a Pie Crust recipe on here that you can use but honestly use the Pillsbury Roll out crusts and know one will know.


2 Eggs- Lightly beaten
1 16 oz Libby’s Pumpkin
¾ Cup Sugar
½ t. Salt
1 13oz can Evaporated Milk
1½ t. Cinnamon - add more if desired
1 t. Pumpkin Pie Spice
½ t. Nutmeg
1 9" Unbaked Pie Crust- see note above.


1. Preheat oven to 425°

2. Combine ingredients in order shown. let set 15- 20 minutes BEFORE you pour into the Pie Shell

3. Bake for 15 minutes at 425° then reduce temp to 350° and bake another 45 minutes or till knife inserted near center comes out clean.

The spices you use in this are up to you- be creative- many like ginger and a little cloves, I just fine the Pumpkin Pie Spice more versatile.
