Rhubarb Crisp Print

Rhubarb, I had never even heard of it untill my ex- MIL introduced my children to it.  She knew it was a wasted effort with me-lol

But the kids LOVE this stuff. 

 

4  Cups of Rhubarb cut into 1" pieces

1/2  Cups Flour

1 1/2  Cups Sugar 

1/4  Teaspoon Salt

1  Tablespoon Lemon Juice

3  Tablespoons melted Butter 

 

Directions:  Preheat oven to 350 degrees.

1. Sprinkle the Lemon Juice over the Rhubarb pieces- this helps maintain the color.

2. Mix the Flour, Sugar and Salt and toss with the Rhubarb till all pieces are coated.

3. Put this all in a pretty 9 x 13 glass or Pyrex mixture. 

4. Melt the Butter and pour over the mixture. 

5. Sprinkle the topping over all of this.

6. Bake for 45 minutes or till top is lightly brown. 

 

Topping

1/2  Cup Flour

1/2  Cup Brown Sugar

1/4  Cup Butter or Margarine

1/2  Cup Oatmeal- DO NOT USE INSTANT

1/2 Teaspoon Cinnamon 

Combine the ingredients with a fork and use in step 5 above.
