Ok, a little history on this. My first husband and I lived in Wichita when we first got married and this recipe came from our neighbor lady Lucy- She was a very sweet woman and a great neighbor. She brought this dessert over to us one day and it was love at first bite. Now i will warn you- it is RICH and I mean Rich. There are also raw eggs in it that some people don't eat- that is cool others of us have been eating raw cookie dough and homemade ice cream for years and do not see it as a problem.
7 Chocolate Wafers 2/3 Cup Butter 2 Cups Powdered Sugar 3 Tablespoons Butter 9 Tablespoons Cocoa ( can substitute 3 oz of unsweeted chocolate-melted) 3 Eggs 1 Tablespoon Vanilla 1 Quart Vanilla Ice Cream (use the good stuff)
1. Grease a 8 x 8 glass dish with butter (use the wrapper-easy this way) 2. Process the Chocolate Wafers in a food processor till crumbly and sprinkle on bottom of dish-Reserve a few for the top. 3. Now process the Butter, Powdered Sugar, the additional 3 Tablespoons Butter and the Cocoa (or your melted unsweetened Chocolate) 4. Once that is mixed up, add the Eggs and Vanilla and pulse till mixed. 5. Spread this over the crumbs in your pan and freeze for 20 minutes. 6. Soften 1 quart of Vanilla Ice Cream in the microwave for 1 minute on 50% power- IF not soft go in 30 second increments at 50% till soft. 7. Spread this on top of your frozen base and sprinkle remaining crumbs on top 8. Freeze until firm and serve. REMEMBER- small portions please
