If you like Lemon Bars, you will love these. They work great for any type of event even High tea..
1/4 Cup Butter (really better than Margarine in this case) 1/4 Cup Powdered Sugar 1/2 Teaspoon Baking Powder 1 Cup Flour Filling: 2 Tablespoons Lemon Juice (again the real thing is best in this recipe besides you need the Zest) 2 Eggs 1 Teaspoon Grated Lemon Zest 1 Teaspoon Salt 2 Tablespoons Flour 1 Cup Sugar
Crust Directions: Preheat oven to 350 degrees 1. Cream the Butter and the Powdered Sugar 2. Add the Baking Powder and 1 Cup of Flour mix well- it will make a stiff batter 3. Press this into the bottom of a 9" square pan (do NOT butter pan) 4. Bake for 15 minutes Filling Directions: 1. Beat the Eggs with the Sugar 2. Now add the Lemon Juice, the Lemon Zest, Salt, and the 2 Tablespoons of Flour and mix well 3. Pour this mixture over your crust 4. Bake 25 minutes and let cool 5. Frost and Eat
Frosting: Beat together by hand 3/4 cup Powdered Sugar, 2 Tablespoons Milk and 1/2 Teaspoon Vanilla
