These are great on a cold winter night or actually anytime you want a quick, easy, hot meal.


2 lbs. Baking Potatoes
2 T. Butter or Oleo
2 Milk
2 T. Chopped Parsley
1 8oz can Salmon
Salt and Pepper
Mayonnaise


Bake 6 medium or 4 large Potatoes. Scoop our insides leaving the shell intact. Mash the pulp with the Butter, Milk and Parsley.

Drain 1 can of Salmon, and remove bones and skin. Flake it and fold into the Potato Mixture. Add Salt and Pepper to taste and pile the mixture back into the potato shells and coat each with the Mayonnaise on top. Bake until the topping is puffed and slightly brown.
