You don’t get more comfort food than this and some real mashed potatoes. I knew I had finally made it when Larry said my Chicken Fried Steak was as good as his Grandma’s.

2 Lb Tenderized Round Steak
1 Cup Flour
½ Sleeve Saltine Crackers
½ Cup Milk
1 Egg
Salt and Pepper
Oil for frying

Cut steak into 4 or 5 pieces rub flour into steak. You can use a meat mallet to beat it in if you like. (This was Grandma’s Secret) In a small bowl lightly beat Egg and Milk together. In a shallow dish that meat will fit in- i piece at a time at least, mix ½ Cup Flour and crushed Crackers, stir together and add Salt and Pepper.

Start heating oil in a heavy skillet.

It needs to be fairly hot-but not smoking.

Take Floured Steak and dip in Egg/Milk mixture then dredge in Flour/Cracker Mixture. Place in hot grease and fry till done, it is ready to turn over when blood is flowing out on top. Turn and cook till done, drain on paper towels and serve.

This is great with Fried Potatoes.

Yields: Feeds 4-5

This is another area where quality ingredients in will help make sure you end up with a quality meal.
