In our family it is just not a holiday if there are no Deviled Eggs on the table and I mean a lot of them.

 

I also have a number of cool Egg Trays, love egg plates, they show them off so well. I always put Paprika on my eggs,

however my sister does not like it, so I always leave a few plain for her but she eats the ones with it too. 

That is just one of the traditional things about my Deviled Eggs, a couple of others are I like to make them fresh right before the

meal and I always always eat at least 1, I mean you have to use one white just to scrap the bowl out with- right- besides

there is always 1 or 2 eggs that don't peel perfect.

Now this is a recipe, but not like a normal one, I don't have measurements to give you- I will try that in the future. 

 

Boil enough eggs for the event, I always allow 2 whole eggs per person but this is our family who loves them. I mean I have 

NEVER boiled less than one dozen egg, it just would not do besides leftovers are great. 

So #1, never boil fresh eggs, get some a few days before you want to make them- WHY you ask, so that they will peel easier

#2 after I put the eggs in the cold water in the pan, I salt them, pretty heavily. 

#3 After they are done, I run cold water over them and put ice cubes in the pan as well. All to help them peel easier.

 

After I peel them, I place them on a paper towel to dry then use a case knife, or what  some of you may call a butter knife to

cut them in half and scoop out the yolk. Set the whites aside and put the yolks all in one bowl, Salt and Pepper them and mash 

them into itty bitty peices.. 

Now into the yolk bowl I put in a big squeeze of Yellow Mustard, a little Sweet Pickle Juice, just the juice, a Teaspoon of Vinegar 

for bite and some  Mayonaise till you have it the consistancy you want.  Just adjust this to your taste. Sometimes I really like

more bite so more acid or Vinegar goes in, if you have too much bite, add a little Sweet Pickle Juice. 

So now you you have my basic recipe for Deviled Eggs.
